Hands up if you need a super freaking quick and easy lunch idea or snack recipe?! I have something that fits the bill; please welcome, easy and healthy cucumber rolls. All you need is some delicious fresh mini cucumber slices, whipped cream cheese, a tortilla and some ‘everything’ seasoning. These rolls are ready in two minutes! As in, you gather the ingredients, spread the cheese, chop the cucumbers and shake some seasoning and voila, the kids get their healthy snack and stop whining! Ahhh, peace and quiet.
Follow a Keto or low carb diet? I got you. Ditch the tortilla, and replace it with some meat. You can make it with sliced ham or another kind of your favorite deli meat. Which brings me to the cream cheese component of this recipe. I suggest using whipped cream cheese since it spreads easily, and this is especially true when spreading it across a slice of deli meat. By all means, use a regular cream cheese if that is all you have on hand, but allow it to soften so it’s not ripping up your tortilla or meat.
‘Everything but the bagel’ seasoning from Trader Joe’s is used in this recipe, (or just ‘everything’ seasoning from other stores), and if it’s not your jam or the kids don’t like it, leave it off or swap it for something you like. Even a sprinkle of garlic powder and sea salt would be nice.
Mini seedless cucumbers are the same as any regular seedless cucumber, just smaller. It doesn’t matter what you use, just know a big slice of cucumber might be more difficult to keep inside the tortilla. I would cut in half, or quarter after thinly slicing. Again, your food, your rules.
How to achieve easy and healthy cucumber rolls
Peel and thinly slice the cucumber along the diameter. Yes, peeling is optional and that’s how I like it, you do you.
Spread the cream cheese across the entire tortilla
Add your sliced cucumbers, with a little space between each one.
Sprinkle your seasoning on half the tortilla, or deli meat (pictured is ham)
roll tortilla beginning with the seasoned side.
Cut into 1-2 inch pieces, like a sushi roll or leave as is and serve it like a burrito

Ingredients
- 4 mini seedless cucumbers peeled and cut into circles
- 4 soft flour tortillas or option to use deli meat/ham/turkey etc.
- 4 tablespoons whipped cream cheese divided 1 tbsp per tortilla
- ‘Everything’ seasoning as desired or other preferred seasoning
Instructions
- Peel and thinly slice the cucumber along the diameter. Peeling is optional.
- Spread the cream cheese across the entire tortilla (or deli meat if using)
- Add your sliced cucumbers over whole tortilla, with a little space between each one.
- Sprinkle seasoning on half the tortilla, and roll beginning with seasoned side.
- Cut into pieces like a sushi roll or serve as a burrito!
