Pineapple and Cottage Cheese Toasts – Egg free Breakfast

Pineapple and cottage cheese toasts are made up of fresh, sautéed pineapple, and creamy cottage cheese atop any toasted bread. Only 4 ingredients to a flavorful and healthy egg free breakfast idea.

Often overlooked and underestimated, cottage cheese is actually a very neutral flavored protein. Add anything you want and it’ll take on those flavors. Moreover, it provides a great texture as well. I will admit cottage cheese wasn’t always my favorite growing up (simply by appearance alone), but with a luxurious sweetened golden pineapple topping, it helps hide the ‘funky looking curds’.

Moving on to pineapple. Pineapple of course is an asset in this recipe! Zesty, sweetened pineapple chunks sizzling in a pan, releasing their tropical aroma and caramelizing to perfection. Use a light brown sugar or honey to marinate the pieces of pineapple prior to sautéing, if time allows.

In addition to the pineapple and cottage cheese components, you will need a tasty bread. Use any bread you prefer, like Italian or French, or if you have some sourdough sandwich bread that would also work great! Gluten free bread would also work if you do not consume wheat 🙂

-Cut fresh pineapple into half inch to one inch pieces. Place in a small bowl and mix with brown sugar or honey (optional but helps caramelization and sweetness.) Set aside to marinate.

-Meanwhile, slice and toast 3-4 small pieces of bread. I like Italian or French white bread rounds.

-In a skillet over medium heat, spoon in the pieces of pineapple, reserving the juice at the bottom of the bowl.

-Sauté the pineapple, turning every so often to achieve a nice caramelization on all sides. Once cooked, remove to a new bowl.

High protein breakfast

-After placing caramelized pineapple in new bowl, place toast in the pan, drizzling with the reserved pineapple juice. This step is optional, but it does add the caramelization of the pineapple to rub onto the toast giving it more flavor.

-Remove to plate and begin to assemble:

  • Sliced bread of choice toasted
  • 1 cup fresh pineapple diced
  • 1 tsp brown sugar or honey optional
  • 2-4 tsps cotttage cheese divided amongst slices of toast (use whichever percent you prefer)
  • Sprinkling of chia seeds (optional)

Notes

*Cottage cheese – use your favorite percentage (i.e low fat up to 4%)
*Toast- Italian, French, sourdough, gluten free… all options would work based on your dietary restrictions or what is available to you
*chia seeds – leave them off if you don’t have them, they just add a little crunch and a bit of extra nutrition!
