Hi! If you are new here, this is a dedicated egg free and nut free blog. What that means for you, is that you simply do not need any eggs for this recipe. Or any recipe on the yesyumgo website! Amazing, right? You will not taste the difference, I promise! If you wanted, you could also make them into dairy free double chocolate donuts by replacing the dairy milk with soy milk, and the butter with a plant based type.

How many donuts does this recipe make?

This baked double chocolate donut recipe makes 12 donuts. If that is too much, you can either:

A- halve the recipe

B- Freeze leftover donuts

I know what you’re thinking, and yes donuts along with other baked goods like cupcakes and bread, freeze incredibly well and taste just as good. You will want to freeze them once they have cooled and without glazing. Glaze is not your BFF when freezing and thawing. Just a heads up there.

Lucky for you, the glaze is super simple to make, as I mentioned above and will come together before you can say “how much wood could a woodchuck chuck if a woodchuck could chuck wood.”

Do I need a donut pan?

In short, yes you absolutely need a type of donut pan to make these donuts. Because it is a cake-like donut recipe, it requires the structure to hold the shape as they bake. If you have finagled a way to DIY your own donut pan, I am all ears!

But until then, they are actually super cheap, and you can find a Wilton 2 pack donut pan set on Amazon for $12 bucks or less sometimes. Otherwise, Target has a single pan for about the same price.

How long do donuts stay fresh?

The donuts never make it longer than 2 days in my house, and since they have a glaze, I recommend to refrigerate them over night. Personally, I notice homemade baked goods tend to lose their ‘freshness’ taste after about 3 days. Since there are no preservatives these obviously do not have the shelf life of a store bought item. If you add any cream to the glaze or deviate from the recipe, please note that will also alter their shelf life.

Cake donuts versus yeasted donuts

You will notice that these are not the type of donut that is made with yeast. Typically the white dough donuts are made with yeast, which gives them a fluffy, slightly chewy texture (similar to a cinnamon roll.) Cake donuts are a like a cake pop; they almost melt in your mouth with a soft, moist interior. Baked cake donuts come together much faster than a yeasted donut. Making them an obvious choice when you want a super quick sweet dessert!

Preparation:

-Preheat oven to 350F. Lightly spray or grease the donut pans and set aside.

Make the batter:

-In a medium mixing bowl, sift the dry ingredients: flour, granulated sugar, powdered sugar, cocoa powder, baking powder, and salt. Whisk well so no ‘dry pebbles’ are left.

-Add the wet ingredients: milk, melted butter and vanilla extract. If you want to make this dairy free or vegan, use soy milk in place of dairy milk and plant based butter, such as country crock avocado oil butter.

-Mix well with a spoon, so no lumps remain.

-Spoon into a sandwich size ziploc bag, and seal it tight. If you are fancy and have the right tools, you could use a piping bag too. A squeeze bottle with a large spout might even work. A spoon makes a huge mess, I don’t recommend it but you do what you gotta do!

-Snip a small corner and squeeze batter into donut pan, evenly distributing batter about 3/4 of the way full.

-Bake 9-11 minutes until set (internal temperature should be around 200F), tops will spring back and toothpick will come out clean.

-Let sit in pan for 2-5 minutes then remove to a wire cooling rack, face side down. Cool completely before glazing.

Prepare the chocolate glaze:

-In a microwave safe bowl, add the chocolate chips, butter and corn syrup. Heat for 20-30 seconds or until completely melted. Stir well until all ingredients are combined and have formed a smooth glaze.

-Dip the tops of the donuts evenly into the glaze. If desired, add sprinkles while glaze is still wet. Allow to cool again, I like to place in the fridge to solidify faster.
