What is Buffalo Chicken Salad Dip? Is it spicy?

It is a healthy take on buffalo chicken dip, combined with chicken salad. You get all the desirable creamy elements of a buffalo chicken dip, with the added bonus of nutritious and high protein elements as well.

This is very mildly spicy, and I am a wimp when it comes to spicy food. Take that as reassurance that it is not spicy at all but still bold in flavor. If you prefer more spice, add more sauce!

What kind of dressing for Buffalo Chicken Salad?

This Buffalo Chicken Salad uses only Greek yogurt and Franks RedHot, with some salt and pepper as its dressing. Unlike chicken salad, buffalo chicken dip usually uses shredded cheddar cheese and cream cheese in the base of the sauce, however there is NO Cream Cheese in this recipe. It keeps it lighter and yet still super creamy because of the Greek yogurt.

No mayonnaise in a chicken salad recipe?

Chicken salad uses mayonnaise typically too, making it not as health conscious as it could be. Needless to say, this is an egg free recipe website, meaning there would not be mayo in this recipe. I could have added a vegan mayo, but eh, why fix something if it is not broken?

If you are interested in a vegan mayo salad recipe, try this one for my vegan broccoli salad. It is nut free and egg free, and makes an amazing side dish! FYI – I add bacon to the broccoli salad decidedly making it not vegan friendly, but leave out the bacon and you are good to go with a vegan broccoli salad.

How to eat Buffalo chicken salad Dip?

I love to stick a cracker in it and use it as a dip! My favorite choice of crackers are the sourdough discard cheese crackers that are super simple to make. You could also use club crackers or whatever you have on hand.

Another option is a sandwich. Make it into a high protein sandwich, take it to school or work and you will stay full all afternoon.

Alternatively, you could eat it on its own. Which I have witnessed in my household, but won’t name names. Just goes to show how tasty it is as a standalone side dish 😉

Preparation:

Begin by cooking one or two chicken breasts, depending on their size. I add salt and pepper to the chicken. This recipe is very flexible with ingredients, and you can add or take out whatever seasonings you want.

Allow the chicken to cool slightly then shred the chicken and set aside.

Shred the carrots, and then cheese on the fine side of the cheese grater. Dice the celery and green onions. Set aside.

Make the Buffalo Chicken Salad Dip

In a medium mixing bowl, combine the carrots, cheddar cheese, celery, green onions, Greek yogurt and buffalo sauce.

Mix all together then add in the shredded chicken and mix to combine. Taste and add salt and pepper as desired.
