This strawberry and goat cheese crostini with balsamic glaze is so simple and absolutely mouth watering. It is the perfect appetizer for a dinner party, or even a great game day snack. Who says you can’t feel fancy when watching football? Or whatever sport? Clearly I’m super into sports. Anyway, this is a truly delectable recipe of sweetened strawberries with a hint of lemon, and rich goat cheese spread across a crisp crostini. Slap it with a quick drizzle of balsamic glaze and mmm… what is not to love?
This recipe is for all you raw tomato haters out there! Truth be told, I do not care for tomatoes; raw tomatoes are especially bleh to me. So when needing a bruschetta type appetizer, it just makes sense to switch tomatoes for strawberries. They’re both red and both are fruits. That logic tracks, right? No? Oh well. It tastes amazing and that’s the key.
Dietary Notes:
This recipe is vegetarian, nut free, and egg free, for those with any allergies or dietary intolerances, making them a safe choice for serving a crowd. You could even make your own baguette to avoid any chance of cross contact from the bakery.
When you put this appetizer together, you will find you don’t really need a strict recipe, but rather use this as a guide. Everyone has different preferences, for example:
- my husband would use olive oil and I use avocado oil; both work, so use what you’ve got or what you prefer!
- Goat cheese can be used lightly, in moderation, or with a heavy hand.
- Strawberries do not need to be sweetened with sugar or the zest of a lemon but it really ties it all together.
- balsamic glaze is also one of those strong ingredients that you can use a lot of or just a little.
All that matters is that these amazing little toasted baguette pieces are smeared with mild goat cheese, a sweetened strawberry-lemon topping, and of course a trickle of balsamic glaze.
How to achieve mouth watering strawberry and goat cheese crostini with balsamic glaze
Slice the baguette into 1/2 inch pieces, drizzle each side with avocado oil.
Heat a skillet over medium heat, and toast the baguette slices,* flipping after getting slightly brown. Remove to a cooling wire rack to cool slightly then place on a parchment lined baking sheet.
Once all pieces have been toasted, spread goat cheese, about 1 teaspoon per slice (or whatever your preference!)
Take the washed and diced strawberries and put in a bowl, mix gently with sugar and lemon zest.
Scoop strawberry mixture on top of goat cheese covered crostini bread
Drizzle balsamic glaze over the pieces in long stretches, covering multiple crostini pieces in one fell swoop.
