strawberry and goat cheese crostini with balsamic glaze

Ingredients
  

  • 1 whole baguette sliced into 1/2 inch slices
  • 4 oz fresh goat cheese plain and mild
  • 1 cup strawberries diced into small pieces
  • 1/2 or 1 teaspoon granulated sugar depending on tartness of berries
  • Zest of one lemon optional
  • balsamic glaze as desired

Instructions
 

  • Slice the baguette into 1/2 inch pieces, drizzle each side with avocado oil.
  • Heat a skillet over medium heat, and toast the baguette slices,* flipping after getting slightly brown. Remove to a cooling wire rack. Then place on a parchment lined sheet pan.
  • Spread goat cheese, about 1 teaspoon per slice (or whatever your preference!)
  • Take the washed and diced strawberries and put in a bowl, mix gently with sugar and lemon zest.
  • Place strawberry mixture on top of goat cheese covered crostini bread.
  • Drizzle balsamic glaze over the pieces in long stretches, covering multiple crostini pieces in one fell swoop.

Notes

*alternatively, oven bake the crostini at 400F for 5 minutes or until lightly browned
