Eggless S’mores Chocolate Chip Cookies [Nut Free]

Enjoy the novelty of s’mores in a chocolate chip cookie with this Eggless S’mores Chocolate Chip Cookies Recipe. This one bowl recipe combines graham cracker crumbs, Mallow Bits, and of course chocolate chips in this fun cookie fusion.

Basic cookies often rely on eggs for structure, but these Eggless S’mores Chocolate Chip Cookies are crafted to be perfectly crisp and delicious without them. If you enjoy a thin, crisp and slightly chewy cookie then this one is for you!

Specific Ingredients for Eggless S’mores Chocolate Chip Cookies

You will need a few specific ingredients in this recipe. If you deviate, then YMMV, and that is on you!

  1. Graham Cracker Crumbs – Can’t have s’mores without graham crackers. I put mine in a bag and whack it with my measuring cup until I get mostly fine crumbs. A few bigger bits are ok to have too, giving it some texture.
  2. Mini Dehydrated Marshmallow Bits – Unlike regular mini marshmallows, these mini dehydrated marshmallow bits keep their shape when baked. You can find them at Walmart, Target, or amazon. If you substitute with regular mini marshmallows, they will melt more, creating a different texture and overall vibe.

Tips for Baking the Perfect Eggless S’mores Chocolate Chip Cookies

For a Crispy Cookie: Bake until the cookies are golden brown for that crispy, crunchy cookie. As mentioned above, these cookies are designed to be thin.

That being said, if you prefer a chewy bite, you can remove them from the oven slightly earlier, just as the edges turn golden. They will look slightly underdone; simply allow them to sit on the pan using residual heat to further bake them.

Make Ahead Cookies

Like most of my cookie recipes, this dough can be made ahead of time! You can refrigerate the dough for up to a day, which helps the flavors meld and deepens the cookie’s overall tastiness. Alternatively, scoop the dough into balls and freeze them, so you’re always ready to bake fresh Eggless S’mores Chocolate Chip Cookies at a moment’s notice. Convenient, right?

How to make the Best Eggless S’mores Chocolate Chip Cookies:

Preheat oven to 350F. Line a sheet pan with parchment and set aside.

In a medium mixing bowl, combine the butter and sugars, mix well.

To the mixture, add the milk about 1 tablespoon at a time, mixing well after each addition. Whip air into the batter until fluffy.

Stir in the vanilla extract.

On top of the dough, add the flour, graham cracker crumbs, baking powder, baking soda, and salt. Mix until combined.

Stir in the chocolate chips and Mallow Bits until evenly distributed.

Using a 1 tbsp cookie scoop, scoop out dough balls and place about 2 inches apart on sheet pan. Keep in mind this dough will spread as it is naturally thinner.

Bake for 14-16 minutes, depending on size and how well done/crispy you want them. Remove from oven earlier if you like a more chewy cookie and allow residual heat from pan to further bake. For a crispy cookie, allow to cook until golden brown throughout.

Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 ¼ cup all purpose flour
  • 1/2 cup finely crushed graham cracker crumbs about 6-7 graham cracker squares
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup Mallow Bits I use Jet-Puffed Bits

Instructions

Notes

*Graham Crackers- I place the graham crackers in a ziploc bag and crush with the bottom of my measuring cup until mostly fine crumbs. You can use a food processor etc. But do not over do it. Some texture is nice for the cookie.
