Eggless S’mores Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 ¼ cup all purpose flour
  • 1/2 cup finely crushed graham cracker crumbs about 6-7 graham cracker squares
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup Mallow Bits I use Jet-Puffed Bits

Instructions
 

  • Preheat oven to 350℉. Line a sheet pan with parchment and set aside.
  • In a medium mixing bowl, combine the butter and sugars, mix well.
  • To the mixture, add the milk about 1 tablespoon at a time, mixing well after each addition. Whip air into the batter until fluffy.
  • Stir in the vanilla extract.
  • On top of the dough, add the flour, graham cracker crumbs, baking powder, baking soda, and salt. Mix until combined.
  • Stir in the chocolate chips and Mallow Bits until evenly distributed.
  • Using a 1 tbsp cookie scoop, scoop out dough balls and place about 2 inches apart on sheet pan. Keep in mind this dough will spread as it is naturally thinner.
  • Bake for 14-16 minutes, depending on size and how well done/crispy you want them. Remove from oven earlier if you like a more chewy cookie and allow residual heat from pan to further bake. For a crispy cookie, allow to cook until golden brown throughout.

Notes

*Graham Crackers- I place the graham crackers in a ziploc bag and crush with the bottom of my measuring cup until mostly fine crumbs. You can use a food processor etc. But do not over do it. Some texture is nice for the cookie.
