Greek yogurt chocolate chip scones are a super fast scone recipe that comes together in 5 minutes or less, with only one bowl! Bonus: Greek Yogurt=protein, and no eggs needed.

How are Greek yogurt scones different than regular scones?

Typically scones are made to be flaky with layers of butter. This is a healthier, protein packed version where we replace the butter and milk with Greek yogurt. If you live under a rock, I will let you know that Greek yogurt is generally considered a great source of protein. Thus making this recipe the perfect snack to give to hangry kids when they get home from school.

These also make for a great eggless breakfast idea. I like to keep freshly baked, (then cooled) scones in the freezer. When I need a quick morning meal, I can easily pop it in the toaster oven or microwave to reheat. One of my kids loves these with a layer of cream cheese sandwiched in the middle. Extra, extra protein πŸ˜‚

Why are these better than regular scones?

One of the big pros about this recipe for Greek yogurt chocolate chip scones is the reduced sugar. There is very little added sugar in this recipe, as compared to other typical scone recipes which often use it as a main ingredient. I find that just a simple sprinkling on top is sufficient sweetness and flavor, as well as the chocolate chips.

If you wanted to keep it extra healthy, try using unsweetened chocolate chips or dark chocolate in place of the semi sweet variety. There are many varieties of this such as cacao chips, carob chips, or brands that use stevia in place of sugar. Above all, definitely do not skimp the chocolate chips.

For one, you do not need this dough to rest.

Secondly, there is also no special kitchen equipment involved.

As opposed to regular scones, there is usually a process of using cold butter blended in a food processor and a resting period to help the gluten relax. I am all for extra steps when necessary, but if I can achieve the same or similar result from an easier way then you best believe that is the route I will take!

A little back story of the recipe

Y’all – i am not too proud to admit I mucked up a simple 3 ingredient bagel recipe. And in a sheer act of desperation (laziness?) I ended up turning it into a magical scone recipe.

I had the self rising flour and greek yogurt but the act of adding the chocolate chips and turning them into bagels was apparently a bridge too far for me. What did I do instead? As the saying goes, turn lemons into lemonade!

I kneaded the chocolate chips in, added some extra liquid, shaped it into a large disc, and topped with butter and sprinkled with granulated sugar.

Then, made the cute little triangle shapes by cutting into 8ths and there you have it! Homemade scones, put together in 5 minutes or less. Do I deserve an award? For being lazy, probably.

Anyway these have become a new favorite in my house. I love how sometimes rejection really just turns into redirection. A new recipe, something my family loves, and it is super easy!

Using only 5 ingredients, this recipe is the epitome of minimum effort, maximum results. Enjoy!

How to achieve the best Greek yogurt chocolate chip scones

Preparation:

-Preheat the oven to 375F. Line a sheet pan with parchment paper and set aside.

-In a medium mixing bowl, combine the Greek yogurt, self rising flour and one tablespoon of water and mix with a spoon until you get a shaggy dough.

-Turn onto counter and knead until all ingredients are combined into a workable dough. If it seems too dry, add another tablespoon of water, or if it seems too wet and sticky add a sprinkle of flour until you get a good consistency.

Eggless scones recipe

-Knead in desired amount of chocolate chips. Then shape into a disc about 1 1/4 inch thick placing extra chocolate chips on the top (for looks, ya know)

Eggless scones

-Pick up the disc and place on the sheet pan. Cover with butter as if you were buttering a piece of toast, and then cut into 8th’s. Sprinkle with granulated or a coarse sugar and bake for 21-25 minutes until cooked through and bottoms are golden brown. Internal temperature should be about 200F.

-Allow to cool on the pan for a could minutes then remove to a wire/cooling rack
