Preheat the oven to 375F. Line a sheet pan with parchment paper and set aside.
In a medium mixing bowl, combine the Greek yogurt, self rising flour and one tablespoon of water and mix with a spoon until you get a shaggy dough.
Turn onto counter and knead until all ingredients are combined into a nice dough. If it seems too dry, add another tablespoon of water, or if it seems too wet and sticky add a sprinkle of flour until you get a good consistency.
Knead in desired amount of chocolate chips. Then shape into a disc about 1 1/4 inch thick placing extra chocolate chips on the top (for looks, ya know)
Pick up the disc and place on the sheet pan. Cover with butter as if you were buttering a piece of toast, and then cut into 8th’s. Sprinkle with granulated or a coarse sugar and bake for 20-25 minutes until cooked through and bottoms are golden brown. Internal temperature should be about 200F.
Allow to cool on the pan for a could minutes then remove to a wire/cooling rack.
