Greek yogurt chocolate chip scones

Ingredients
  

  • 1/2 cup Greek yogurt
  • 1 1/4 cup self rising flour
  • 1/4 cup semi sweet chocolate chips
  • 1-2 tablespoons water
  • Butter for glazing the top
  • Sprinkle of granulated sugar (1-2 tsps)

Instructions
 

  • Preheat the oven to 375F. Line a sheet pan with parchment paper and set aside.
  • In a medium mixing bowl, combine the Greek yogurt, self rising flour and one tablespoon of water and mix with a spoon until you get a shaggy dough.
  • Turn onto counter and knead until all ingredients are combined into a nice dough. If it seems too dry, add another tablespoon of water, or if it seems too wet and sticky add a sprinkle of flour until you get a good consistency.
  • Knead in desired amount of chocolate chips. Then shape into a disc about 1 1/4 inch thick placing extra chocolate chips on the top (for looks, ya know)
  • Pick up the disc and place on the sheet pan. Cover with butter as if you were buttering a piece of toast, and then cut into 8th’s. Sprinkle with granulated or a coarse sugar and bake for 20-25 minutes until cooked through and bottoms are golden brown. Internal temperature should be about 200F.
  • Allow to cool on the pan for a could minutes then remove to a wire/cooling rack.
