Picture this: It is your busiest weeknight of the week, you’re finally done extracurriculars, dinner, cleanup, homework, lunches made, floors vacuumed, showers done, the whole rigamarole. You sit down on the sofa, the first time in a millennia and check your emails, only to notice one from your kid’s teacher, “Hi ___mom/dad__!, we are having an impromptu birthday celebration for our class pet Billie the goldfish, please send in a ‘safe’ cupcake so ___your child___ can participate too! :)”

You can release that breath you took while reading that last paragraph. It’s just hypothetical, for now at least. But what is a parent or caregiver to do? Well you might be prepared already with frozen cupcakes in the freezer (you lucky overly-prepared 10% of us!) or you might have to make cupcakes from scratch. OR you can dash to Target before they close (you’ve got 10 minutes to get there honey!) Grab some boxed cake mix and some yogurt –greek, regular, vanilla or plain, any unflavored will work. Buy a can of frosting while you’re at it, or if you feel so inclined you can make your own easily.

How to achieve eggless boxed cake

Grab your favorite and allergy friendly (if necessary) boxed cake. For this example I used Betty Crocker Super Moist Spice Cake Mix 13.25 oz/ 375g. Alternatively you could use boxed mix favors like vanilla, chocolate, rainbow chip, etc.

Use the directions for water and oil on the back of the box, and instead of eggs add in 1/4 cup of plain yogurt, and an additional 1/3 cup all purpose flour. Mix all ingredients together well, and bake as directed on the box. Piece of cake!

Cake Hack: Turn a boxed cake mix into delicious cake, using no eggs!
Course Cake, Cupcakes, Dessert, Snack

Ingredients
  

  • 1 package of boxed cake, any flavor, approximately 375g
  • 1/4 cup plain/unflavored yogurt (greek or regular)*
  • 1/3 cup all purpose flour*
  • water, as per package directions
  • oil, as per package directions

Instructions
 

  • Preheat oven to 350°F (or 325°F per package directions). Grease cake pan or line cupcake pan.
  • In a medium mixing bowl, combine package contents of boxed mix, yogurt, flour, water and oil. Mix until well combined.
  • Pour into cake pan or cupcake pan, and bake as directed on box (until toothpick comes out clean)
  • Allow to cool before frosting. Enjoy your easy cake and/or cupcakes!

Notes

*Tips, Tricks and Substitutions

*Yogurt– I have tried using greek yogurt as well as vanilla regular yogurt, both yield successful results. Sour cream can also substitute yogurt. 
*Flour– The additional flour is necessary to bulk up the cake mix, otherwise it will be light as air and fall apart when you try to frost it.
*Vegan– to make this dairy free or vegan, use unflavored coconut yogurt or plant based sour cream
