Storage

Enjoy this pumpkin spice granola treat after it has cooled down from baking. Otherwise you can store it in the freezer for a couple of months (up to 3 months for ideal freshness.) I keep mine in a zip top bag and when I have a yogurt or a hankering for a pumpkin spice treat, just take desired amount out of the freezer and enjoy right away. No thawing or anything needed!

Pumpkin Spice Granola [nut free, gluten free, vegan]

Ingredients
  

  • 2 1/4 cups organic rolled oats*
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup avocado oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 300° and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, cinnamon, pumpkin pie spice, and salt. Mix well.
  • In a separate smaller mixing bowl, combine the brown sugar, maple syrup, oil, and vanilla. Mix thoroughly until well combined. Pour the wet ingredients into the dry ingredients. Mix everything together until all oats are covered in the wet ingredients mixture.
  • Pour granola mixture onto the prepared baking sheet, and smooth out with a spatula until a thin, even layer is achieved. Really push or smack the granola until it is nice and tight together.
  • Bake for 20-25 minutes or until desired crispiness and golden color is achieved. If you prefer it chewy, remove earlier.
  • Remove from oven and allow to cool for another 25 minutes, before breaking up and eating or storing. Granola should be cooled to room temperature before storing.

Notes

*use certified gluten free oats if that is important for your dietary needs
*store leftover granola in a zip top bag in the freezer for up to 3 months.

*Use certified gluten free rolled oats. We use this brand since they are organic and made in peanut and tree nut free facility.

*Can be stored at room temperature in an airtight container or zip top bag for about 3-5 days

*Can be stored frozen in a sealed zip top bag; when ready to eat just remove from freezer and serve immediately (tastes great frozen!)
