Pumpkin Spice Granola [nut free, gluten free, vegan]

Ingredients
  

  • 2 1/4 cups organic rolled oats*
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup avocado oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 300° and line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, cinnamon, pumpkin pie spice, and salt. Mix well.
  • In a separate smaller mixing bowl, combine the brown sugar, maple syrup, oil, and vanilla. Mix thoroughly until well combined. Pour the wet ingredients into the dry ingredients. Mix everything together until all oats are covered in the wet ingredients mixture.
  • Pour granola mixture onto the prepared baking sheet, and smooth out with a spatula until a thin, even layer is achieved. Really push or smack the granola until it is nice and tight together.
  • Bake for 20-25 minutes or until desired crispiness and golden color is achieved. If you prefer it chewy, remove earlier.
  • Remove from oven and allow to cool for another 25 minutes, before breaking up and eating or storing. Granola should be cooled to room temperature before storing.

Notes

*use certified gluten free oats if that is important for your dietary needs
*store leftover granola in a zip top bag in the freezer for up to 3 months.
