Make the tater tots as per package instructions. For this recipe, I cooked them in the air fryer until golden and crispy. If you do not have an air fryer, bake them in the oven as per package directions. You may have to cook and entire package of tater tots in batches in the air fryer since it may not be large enough to accommodate.
Cook a 1 lb package of breakfast sausage in a medium Dutch oven or pan. Do NOT drain any oil.
Once the breakfast sausage is just cooked, add in 3 tablespoons flour
Mix the flour into the sausage for about 1-2 minutes.
Next while constantly stirring, slowly add your soy milk and water. The sauce will continue to thicken as it cooks and cools, so if you prefer more liquid gravy, add extra soy milk or water as needed.
Taste and add salt and pepper if desired.
Place cooked tater tots in the bottom of a ramekin or bowl or casserole dish, and top with the sausage gravy. Add a sprinkle of fresh parsley if you like!
