  • 1 tablespoon vanilla yogurt*
  • 2 teaspoons avocado oil* or other neutral oil
  • 1 teaspoon water
  • 1/3 cup milk*
  • 1 tablespoon cornstarch
  • 1/4- 1/2 teaspoon cinnamon optional
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons powdered sugar depending on your sweetness level

Instructions

  • In a 4 cup/950 mL square pyrex, or other similar size container with sides, combine the yogurt, oil, and water and whisk well.
  • Add milk and cornstarch and whisk well again, until little bubbles appear. Add in cinnamon (if using), vanilla, and powdered sugar. Whisk until all ingredients are fully combined.
  • Dip bread into the wet mixture, coating both sides evenly. Place in a preheated pan and cook over medium heat, until golden brown on one side; flip bread and cook on the other side until golden brown. Remove to a cooling/wire rack and continue the process with remaining slices of bread.
  • Enjoy with toppings such as fruits, powdered sugar, maple syrup or even plain!

Notes

Tips, Tricks and Substitutions:
*Yogurt- Plain Greek yogurt may also be used in place of vanilla, just note the 'tang' comes through more. You can also use a plant based yogurt such as coconut to make this vegan/dairy free.
*oil- any neutral oil like canola oil, avocado or vegetable will work
*milk- to make vegan or dairy free, use preferred non-dairy milk. My favorite is soy, I haven't tried other alternatives.
